EggsEasy Cheesy Mexican Scrambled Eggs

I love love love salsa with my scrambled eggs. It’s SO good. Today I decided to add a little bit of light cheese. It was ah-mazing. And super filling! Usually I’ll have a fat free english muffin with my eggs, but I didn’t feel the need for it today. I had no intention of sharing this with you. I mean, no offense, nothing against YOU. I just didn’t think of it. Until I was done making it and saw how awesome it looked. Then I knew I had to! And it’s ALL about the salsa. So make sure you get really yummy salsa, or make your own. Ingredients:

  • 4 egg whites
  • 1 whole egg
  • 1/3 cup light cheddar cheese
  • 1/3 cup salsa (or however much you would like)
  • Olive oil spray

 

Whisk the 4 egg whites and 1 egg together in a bowl. Spray a pan with olive oil spray and turn the burner on medium heat. Pour the eggs into the pan and scramble. When the eggs get to the consistency you’d like, add in your cheese and salsa. Mix around until cheese melts. BOOM! You’re done. It’s so simple and yummy!

Feel free to use 5 egg whites and leave out that whole egg. But the yolk is healthy for you, and I think the overall texture of the eggs are way better. But it’s up to you!
