Zucchini FriesZucchini Fries

Ok, you guys are going to love this. I stumbled upon this recipe on Pinterest. I was so happy because I had a crap load of zucchini’s to get rid of, too! They are super easy to make and wayyyyy tasty! I’m actually really excited for you to try this! This is me, being excited. I know you can’t see my excitement, but just trust me, foo, there is excitement written all over my face.

Alright, on to the recipe!

 

You will need:

  • 1 cup whole wheat flour
  • 1/4 cup cornmeal
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cayenne pepper
  • 5 zucchinis
  • 2 egg whites
  • Olive oil spray
  • Large ziplock bag

Preheat oven to 475 degrees. You can line a baking sheet with parchment paper and spray with olive oil, but I didn’t have that because… I don’t know. Is it normal to have that stuff on hand? Well, whatever. I didn’t do that, I just sprayed a cookie sheet with olive oil. Take that parchment paper.

Wash and cut zucchinis into small strips, about 1/4 inch thick.

In a large bowl, beat egg whites until foamy-ish (I put the ish part because I couldn’t get the foamy, don’t judge). Toss the zucchini strips in there and evenly coat.

 

 

 

 

 

 

 

Then, mix the flour, cornmeal and spices in the ziplock bag. Place the zucchini in the bag, shake to coat. (Yes, I realize Taco is in the picture. He’s a camera whore. And no, he’s not allowed up on the counter, only the chair.)

 

 

 

 

 

 

 

 

 

 

This can get messy, so make sure you wear a crappy shirt that you don’t even care about, because you hate it so much and you hate the place it came from. Oh, what? Sorry about that. (By the way, I’m just kidding! Kinda. Sorta. Ish.)

 

 

 

 

 

 

 

Place the zucchini strips on the cookie sheet and bake for 7-9 minutes, flip the zucchini and bake for another 7-9 minutes. If you have 3 sides, you might have to flip again and bake for a few more minutes after that. Whatever you want to do.

 

 

 

 

 

 

 

Serve with your favorite dipping sauce! But not ranch, because I’ll cut you if you do that. Come on. These are also really good if you reheat them in a toaster oven.

 

 

 

 

 

 

 

 

 

 

And listen, I’m going to be straight up with you on this… I didn’t figure out the calorie count. I was going to, but when I saw how much leftover flour and what not I had, I was just like… eh. These are crazy low cal, so I wouldn’t worry about it too much!
